Thanks for the warm welcome, skaneebo! That makes things a lot easier. My girlfriend mentioned that we couldn't use the swedish law for some reason that she didn't remember. But anyway, if things are like you said, there would be no problems to fulfill the financial requirements by the european law then. If that makes it faster, we would prefer this route.
How long the application process takes, do you have any guess?
A bit unrelated to this issue, but, I am not getting to learn danish by myself. How could I study danish in Denmark for a longer period than 3 months? I checked the requirements for the student visa and I am able to fulfill them, but I don't know if a language course is eligible for that in Denmark. And how difficult would it be to "switch" my danish to swedish in Malmo? Can I get around, study, find a job and stuff in Sweden or at least in Malmo, Lund or Helsingborg just with Danish?

If you speak fluent Danish, you should have no trouble applying for jobs in Skåne. Mind you if you speak with a strong accent, it might be more difficult.
Then again there are also places where English is enough to get by.
If you reside in Sweden you will not be able to apply for any free Danish courses but you will be able to get courses for free in Swedish in Sweden.
Using EU laws when you girlfriend studies in Denmark but lives in Sweden is a tricky thing as your girlfriend will then be required to produce a public Danish health insurance for you which is impossible to get and hence a deadlock.
So recommended again would be that your girlfriend moves first to Sweden alone, you wait and apply for the Swedish residence permit and moves once you have obtained it which would usually take 3 months.

Hello guys, me again. We are approaching the time where we will apply for all that thing.
Since the last time I talked to you, the "average time" mentioned at the migrationsverket page ( http://www.migrationsverket.se/info/2246_en.html) went from 3 to at least 5 months, and I believe it's likely to be more in the near future.
Since this would stretch my waiting for longer than I could afford (Ireland's economy is still dreadful), I was looking at into what was mentioned sometimes in this forum, applying through both EU and Swedish laws, since the EU law allows you to stay while the application processed.
In the last post it was said "Using EU laws when you girlfriend studies in Denmark but lives in Sweden is a tricky thing as your girlfriend will then be required to produce a public Danish health insurance for you which is impossible to get and hence a deadlock." Why? Can it even be tried? Does something change about it if she's working/studying in Sweden?
Could we apply for both, knowing that the EU application will be rejected, just to get to stay while the Swedish Law application, the one that really counts, is processed? If yes, even if with missing documents? (in the case, this insurance). My girlfriend says that she's sure that we can apply through the EU law, but I am quite convinced that from what I've read in several places including here this would be even impossible?
Another reason for that is this paragraph, taken from the migrationsverket page again.
"Requirements to be granted a residence permit
The likelihood of you obtaining a residence permit depends on your relationship to the family member who lives in Sweden.
Husband/wife, registered partner or cohabitee
You are entitled to receive a residence permit if you are married, have entered into a registered partnership with, or are cohabiting with someone living in Sweden. Your marriage or partnership should be registered with the Swedish Tax Agency.
Future husband/wife or cohabitee
You may receive a residence permit if you are planning to marry or cohabit with someone living in Sweden."
The use of "may" instead of "entitled" is what worries me. As if you don't necessarily have the right of a permanent residence if you are not married yet and they can refuse your application just because they want to. Am I being paranoid or is really wiser to marry officially just to avoid your case to depend on whether the officer likes you or not?
